BBQ Chicken Wings |

Pick up a 5 lb bag of the Tyson unseasoned frozen wings from your local Wal Mart. Season with your favorite rub on one side of chicken before you fill the drum. Next start to fill the drum, outside the base while the charcoal is heating up. Fill the first level all the way until the meat contacts to the drum. After the rack is full, season the top of the chicken with your favorite rub or spice. Repeat this step for the next two racks. Now you are ready to set the drum on the base.
Make sure the charcoal is ashed and hot. Set the drip pan inside the charcoal ring and set the drum over the pan. Cover the drum with the barrell and let the tailgate classic take over from there. Watch the temp. on the therm. It should run at about 225-250 degrees. If it goes above this temp, pull the therm and add a little beer into the barrell. This will temp drop the temp and will eventually set on the 225 -250 range. Check the unit once in a while the
monitor the temp. If the unit is runnnig to cool, add the charcoal ring over the charcoal or add more charcoal before the orginal charcoal burns out.
Cook time for a 5 lbs of chicken wings is about 2 hrs. Chicken needs to be cooked to at least 170 degrees. To check the chicken, open the access door and pull a piece out and check with a meat probe.

Pork Chops |

You can cook any thickness from 1/2" to 1-1/2". Do not trim all the fat off the chops. The fat is what drips and actually helps make the unit work. You can place 5-6 chops per rack.
Simply season one side with your favorite rub. Then start to stack in the bottom rack and then season the other side of the chops. Pack full, they can be close together and touching the side of the drum.
Repeat this step for the next two racks. Once the drum is full and the coals are hot, place the dry drip pan in the center and set the drum and cover wit hthe barrell. Try to maintain about 225-250 temp. Adding beer thru the fill valve helps to add moisture and control the temp.
Cook time is 1.5 hr to 2hr. Temp of chops should be 160-165. You can test by opening access door and checking the chop with a meat therm.

Suasage Links / Bratwurst |

You can cook about 10-12 lbs of large sausage links or bratwurst.
Simply stack in the bottom rack and pack full the suasage links or brats. They can be close together and touching the side of the drum.
Repeat this step on the next two racks. Once the racks are full and the coals are hot, place the dry drip pan in the center and set the drum in place then cover with the can. Try to maintain about 225-250 temp. adding beer thru the fill valve helps to add moisture and control the temp.
Cook time is 1.5 hr to 2hr. Temp of sausage should be 160-165. You can test by opening access door and checking the chop with a meat therm.
